TB Crunchwrap

I may never go back to Taco Bell again. (That’s a lie)

There are two fast food places I will visit as regularly as possible. One is very hard to find (LJS), but the other is everywhere. I will get a crunchwrap always, but when I can’t, making them at home is a very viable and delicious alternative.

METHOD

1.      Warm a medium skillet over medium high heat.

2.      Add the sirloin, chili powder, cumin, salt, pepper, and cayenne.

3.      Stir, breaking apart the beef and mixing the spices uniformly throughout for about 10 minutes.

4.      Transfer the cooked and seasoned meat to a medium bowl.

5.      Cut one of the flour tortillas into quarters.

6.      On a flat surface, place 1 whole tortilla down.

7.      Add 1 oz. of cheese to the tortilla in a 5-inch circle.

8.      Add 1/4 of the meat on top of the cheese.

9.      Top the meat with a tostada shell.

10.  Spread 2 tablespoons of sour cream on the tostada shell.

11.  Dab on as much hot sauce as you want.

12.  Top with 1/4 of the diced tomatoes and another 1 oz. of cheese.

13.  Place the cut tortilla quarter on top.

14.  Starting with the edge closest to you, fold the bottom tortilla up, covering the cut tortilla.

15.  Hold it in place and make overlapping folds until the entire thing is sealed.

16.  In a prewarmed grill press, place the crunchwrap seam side down and cook for 3 minutes.

17.  Remove and serve with more hot sauce if you want.

18.  Enjoy.

SOFTWARE

·       1 # ground sirloin, 90% lean

·       1 T. chili powder

·       2 t. ground cumin

·       1/4 t. Kosher salt

·       1/4 t. freshly ground pepper

·       1/4 to 1/2 t. cayenne pepper

·       5 burrito flour tortillas (10-inch variety)

·       8 oz. shredded Mexican cheese (or more if you want them really cheesy)

·       4 tostada shells (5-inch variety)

·       1/2 c. sour cream

·       2 Roma tomatoes, diced

·       Your favorite hot sauce (optional)

 

VARIANTS

You can change out the type of meat if you want (chicken or chorizo would be good). Make sure you use a melty cheese. If you want, you can add jalapenos or diced onions inside. This is all about what you want!
