Commuter Buns

Pop them in the microwave for 30 seconds before heading out on your commute. Delicious.

I found that hot breakfast sandwiches from restaurants or coffee shops on my way to work would have a tendency to be slippery from the cheese. It is not the ideal condition on my commute, so let’s make the sandwich surrounded by bread. No more messy!

METHOD

1.      Microwave the milk and water together until the temperature is 110 to 115 degrees Fahrenheit.

2.      Gently stir in the yeast, sugar, and salt. Set aside for about 10 minutes or until a foam forms on the surface.

3.      In a large mixing bowl, add the flour. Mix in the olive oil and yeast mixture.

4.      Sprinkle out some flour on a surface and turn out the dough. Knead it about 20 times and then form into a ball.

5.      In another large mixing bowl, lightly coat the inside with a little oil.

6.      Place the dough ball in the bowl and cover with plastic wrap. Let it rest in a temperature neutral place (no sunshine or AC) for about 90 minutes.

7.      While the dough is working, mix together the eggs, salt, pepper, and chives together in a mixing bowl.

8.      In a medium skillet over medium heat, melt the butter. Add the egg mixture and cook, stirring constantly with a spatula, until the eggs are set. Move the cooked eggs to a bowl to cool.

9.      Back to the dough. Once it has risen, turn it out again onto a floured surface and knead for about 3 minutes.

10.  Form into a ball and divide in half. Reform each half into a log and cut into 6 pieces, rolling each piece into a ball. Each piece should be about 46 grams (use a digital scale).

11.  Place the pieces on a baking sheet and cover with a kitchen towel. Let them rest for 15 minutes.

12.  After the rest, take one of the balls and roll it out into a 5-inch disc.

13.  Add 1/4 cup of the egg on the top of the disc. Top with a quarter slice of the American cheese and 2 ounces of the sliced ham (fold it to fit inside the disc).

14.  Bring the edges of the dough together in encase the contents and seal.

15.  Repeat with the rest of the dough balls.

16.  Place a sheet of parchment paper on a baking sheet. Place the balls on the sheet, cover with that kitchen towel, and rest for another 30 minutes.

17.  Heat your oven to 375 degrees.

18.  In a small bowl, mix that last egg (not one of the 10) with about 1 T. of water for an egg wash.

19.  After the final rest, brush each ball with the egg wash and poke a few holes in the tops with a toothpick to allow steam to escape. Sprinkle on as much of the Everything Bagel season that seems appropriate.

20.  Bake for 25 minutes.

21.  Cool for 15 minutes.

22.  Enjoy on your commute (or right now).

SOFTWARE

·       1/3 c. whole milk

·       1/2 c. water

·       2 t. active dry yeast

·       3 T. sugar

·       1 1/2 t. kosher salt

·       2 c. flour

·       2 t. olive oil

·       24 oz. thin sliced ham

·       10 eggs (plus 1 more for egg wash)

·       1 t. kosher salt

·       1 t. freshly ground pepper

·       1 T. chives, dried

·       2 T. butter, unsalted

·       3 slices of American cheese, each slice cut into quarters

·       Everything Bagel seasoning

 

VARIANTS

Change out the ham for cooked sausage patties. Use a different melty cheese (flavored cheddar works great). Just keep the ratios and you’ll have tasty and not sliding treats.
